dough recipe

For my lovely partner twomatoe L, since she mentioned in her last post safiha, that she was looking for the perfect dough recipe, and all my friends that asked for it as well, i give you our humble home recipe 😉

2 cups all purpose flour

1 1/2 tbs sugar

1ts salt

2 tbs powder milk

1 egg yalk (only yellow)

1/4 cup oil

1 1/2 cup warm water (add gradually)

meanwhile you need to prepare in a small bowl or cup 1 1/2 ts yeast with 4 tbs warm water and cover for 15 min.

mix all of the above in a bowl with your hands, you might need to add some flour to your hands since if sticky at first, or add water if hard, (do not give up just give it some time ) once its ok bring it to the table dusted with flour and start mixing the dough, stretch it and turn it as much as you can, i recommend preparing this dough after a long day at work to get all that pressure out LOL 😉

if you ever took ceramic class there is a technique called “cow face” where the clay looks like a cow face after mixing and pushing with your hands & wrists. use the same technique to mix the dough 😉

after you are done mixing, shape the dough into a round ball and put back into the bowl and cover for 30 min.

once the dough has rested, divide into pieces and thin layers, cut round pieces, fill with prepared stuffing, i used three kinds: spinach, lebnah with olives & za’atar, and cheddar cheese with corn.

you can fold then into half moons, open squares or any other shape you like.

place them on a baking tray into a pre-heated oven for 20 min or till turns golden brown! enjooooooy ^__^
