i HEART zucchini <3

out of the oven, ready to be eaten!

I believe zucchini is in season, it is a delightful summer veggie, that can be used in many dishes.

yesterday i was in my creative cooking mood, and i decided to prepare a light appetizer using shredded zucchini and carrots.

what can be easier than stuffed mini tarts baked in the oven with simple summer stuffing 🙂 yum!

so first i brushed the mini tarts backing pan with some oil, then basically used thin pastry dough and folded it into the mini pans just like origami! it doesn’t have to be perfect, just make sure it covers the edges to contain the stuffing.

for the filling, mix: shaved, washed, drained, & finally shredded medium sized  zucchinis and carrots with 2 ts of dried rose marie, and lots and lots of grated parmesan cheese.

to create a variety of flavors i’ve split the mixture into 3 portions, one as is named it the “original”, the second portion mixed with 2 ts of mustard named it “mustard flavor” obviously, the third mixed with 3 ts of pomegranate molasses “you can guess the name!”.

now comes the easy part, just stuff the pastry, pop into med heatd oven, leave till golden brown and pastry becomes crispy and ready to be munched 🙂
